We are seeking a detail-oriented and experienced Fabrication Manager to oversee the fabrication operations within our beef processing facility. The successful candidate will manage all aspects of the fabrication process, ensuring efficiency, safety, and quality in producing beef cuts that meet customer specifications. This role requires a strong leader with expertise in meat fabrication, employee management, and compliance with industry standards.


Key Responsibilities

  1. Fabrication Operations Management

    • Plan and oversee daily fabrication schedules to meet production targets and customer specifications.
    • Manage the breakdown of carcasses into primal, subprimal, and retail cuts according to company and market requirements.
    • Optimize workflow to maximize yield, minimize waste, and ensure cost-efficiency.
  2. Quality Assurance

    • Ensure all products meet strict quality standards and customer specifications.
    • Collaborate with the Quality Assurance team to maintain compliance with USDA, FDA, and other regulatory requirements.
    • Conduct regular checks on product weights, cuts, and trimming to guarantee consistency and accuracy.
  3. Team Leadership

    • Lead and supervise a team of butchers, trimmers, and fabrication line workers.
    • Provide hands-on training and mentorship to enhance skill levels and ensure adherence to standard operating procedures.
    • Address performance issues, manage schedules, and resolve employee concerns to foster a positive work environment.
  4. Equipment & Facility Oversight

    • Ensure proper operation and maintenance of all fabrication equipment, such as saws, knives, and conveyors.
    • Identify and report equipment malfunctions promptly to minimize downtime.
    • Maintain cleanliness and sanitation in the fabrication area in compliance with food safety standards.
  5. Safety & Compliance

    • Enforce compliance with all workplace safety regulations, including PPE usage and safe equipment handling.
    • Conduct regular safety meetings and drills to promote a culture of safety within the team.
    • Ensure adherence to all animal welfare and humane handling policies.
  6. Process Improvement

    • Analyze production data and identify opportunities for process enhancements and yield improvements.
    • Implement lean manufacturing principles to improve efficiency and reduce waste.
    • Stay updated on industry trends and innovations to enhance fabrication techniques and operations.
  7. Collaboration & Reporting

    • Work closely with procurement, scheduling, and sales teams to align fabrication output with demand.
    • Prepare and present reports on fabrication metrics, including yields, efficiency, and labor costs.
    • Communicate effectively with management to address challenges and propose solutions.
